There are many recipes for cooking fish. It is fried, boiled, baked in the oven in various ways. But if you are lucky on fishing, the excess catch can be salted and closed in banks.
Salted fish in oil sauce "According to my mother's recipe"
You will need:
- 1 kg of fresh fish
- 2 large onions;
- vegetable oil.
For brine:
- 1 liter of water;
- 200 g of salt (not iodized);
- bay leaves - 3 pcs.;
- 100 g of table vinegar 9%;
- peppercorns - 5-6 pcs.;
- allspice - 2-3 pcs.
Preparation
Peel the fish, cut and cut into portions. Prepare the brine: add salt and spices to the water after the water boils, pour in the vinegar and turn it off immediately.
Let the brine cool and then pour the pieces of fish over them and put everything in the refrigerator for a day, the fish should be well saturated.
After a day, remove the fish from the brine and place on a towel. Chop the onion into large rings. When the fish dries up a little, put it in sterilized jars in layers, shifting onions, and fill it with vegetable oil. You can take sunflower, olive, mustard or corn oil, and pepper the fish a little during the installation process.
The dish will be ready in 3-4 days. Fish cans should be stored in the basement or in the refrigerator.
River fish in a spicy marinade
You will need:
- 5 kg of fresh river fish;
- 5 faceted glasses of salt;
- 3 faceted glasses of sugar;
- sunflower, corn or olive oil;
- a mixture of peppers;
- 5-6 large onions;
- carnation - 6 pcs.;
- parsley or celery root;
- bay leaves - 5 pcs.
Preparation
Pour fresh fish, peeled and cut in portions, with a mixture of salt and sugar for a day. Then rinse the fish, dry with a paper towel and place in clean jars, mixed with onions, cut into half rings.
Add spices to jars of fish and fill everything with vegetable oil. After 2-3 days, the fish will be ready for consumption, you need to store it in the refrigerator.
This fish can be served with boiled potatoes or stewed vegetables (stew).
