Let's say you have several different types of juices in front of you: natural, reconstituted, nectar, fresh and vegetable. Which one should you choose? To determine their usefulness and set priorities for ourselves, we will give a brief description of each of them.
So, natural juice. It is obtained in the process of "direct pressing" of fruits. It does not involve any additives in the form of preservatives, colors, or even sugar. Usually sold in glass jars or bottles.
Reconstituted or concentrated juice. For ease of transportation, water is evaporated from the finished juice, and before sending it for sale, it is again diluted with water. Like natural juice, reconstituted juice is free of sugar and artificial additives. The price for such juices is reasonable, and the quality is quite high.
As for nectars, they are made from fruit with pulp, diluted with water and added sugar. Fruit concentration in nectars is much lower than in natural and concentrated juices.
Fresh juices are juices that have just been squeezed out. It is recommended to drink them no later than half an hour after preparation. With longer storage, exposure to fresh air and light contributes to the destruction of almost all substances useful for the body. In stores, as a rule, such juices are stored on ice or in refrigerators - this slows down the oxidative process. Therefore, it is best to use fresh made yourself.
Often in stores, you will notice that certain juices are in the refrigerator, while others are on regular shelves. A completely logical question arises, what is the difference?
The fact is that juices that have undergone instant pasteurization are awarded a place in the refrigerator, which does not have such a strong effect on their texture and taste than traditional pasteurization. As you know, undergoing this obligatory process, the juice loses from 10% to 40% of vitamins.
There is an opinion that vegetable juices are healthier than fruit ones. And indeed it is. After all, the content of acids and sugar in them is much less, and assimilation is easier. Also, vegetable juices contain such important minerals for the body as chlorophyll and potassium.
