Chicken meat is considered a dietary product, it is an excellent source of amino acids and protein for the human body. At the same time, chicken can be used to prepare a huge variety of dishes for everyday and festive meals: snacks, salads, aspic, first and second courses. Chicken can be part of the filling for pies and pizza, boiled, baked in the oven, stewed, grilled or fried in a pan.
Chicken salad
To prepare this snack you will need:
- chicken breast - 1 pc.;
- walnuts - 100 g;
- onion - 1 pc.;
- champignons - 300 g;
- eggs - 3 pcs.;
- Korean carrots - 150 g;
- vegetable oil;
- mayonnaise - 200 g.
Boil the chicken breast. To do this, place it in a small saucepan. Pour water over the meat so that it covers the breast by 1-2 cm. Salt and cook over medium heat until tender. When the breast is ready, do not take it out, but let it cool in the broth.
Prepare the rest of the ingredients for the salad. Boil the eggs hard-boiled, refrigerate and peel them. Peel the onion and cut into small pieces. Cut the champignons into slices.
Heat oil in a skillet, sauté the onion in it, then add the mushrooms and cook together until the mushrooms are golden brown.
Grind the nuts in a mortar. Grind or rub the eggs on a coarse grater. Cut the cooled chicken into cubes.
Layer the salad ingredients in layers, spreading mayonnaise over each. The first is boiled chicken, the second is walnuts, then fried mushrooms and onions, the fourth layer is eggs, and the fifth is Korean carrots.
Chicken corn soup
For the first, make a flavorful and satisfying chicken soup with corn. It includes:
- chicken breasts - 4 pcs.;
- water - 1 l;
- canned corn - 200 g;
- egg - 1 pc.;
- salt and red pepper.
You will also need the following ingredients for the marinade:
- water - 3 tablespoons;
- soy sauce - 2 tablespoons;
- corn flour - 1 teaspoon;
- sugar - 1 teaspoon;
- vegetable oil - 1 teaspoon.
Prepare the marinade. To do this, dissolve sugar in water, add soy sauce, vegetable oil and corn flour. Place the mixture on the stove and heat it for 5 minutes, stirring constantly.
Prepare the fillet, remove the skin and bones, rinse the meat with cold water. Place the chicken in the marinade and let sit for 20 minutes.
When the chicken is marinated, cut the meat into small pieces. Pour water into a saucepan and boil it. Place chicken and corn in boiling water. Season with salt to your liking. Bring the mass to a boil and simmer over high heat for 5 minutes, then reduce heat and simmer for another 15-20 minutes.
Beat the egg, salt it with a pinch of salt. Pour into soup and cook together, stirring constantly. Remove the soup from heat and let it sit for about 10-15 minutes. Then season with red pepper and serve.
Chicken with mushrooms in a pot
For this recipe, take:
- chicken fillet - 0.5 kg;
- champignons - 0.5 kg;
- sour cream - 300 g;
- hard cheese - 100 g;
- garlic - 2 cloves;
- parsley greens - 1 bunch;
- vegetable oil - 2 tablespoons;
- salt, black pepper and chicken seasoning.
Wash the fillets, pat dry with a paper towel and cut into large pieces. Heat vegetable oil in a skillet. Grate chicken pieces with seasoning and quickly sauté in hot oil until golden brown. Remove the meat from the pan and place it on a napkin to absorb the excess fat.
Cut the champignons into slices and fry them in the same pan in which the meat was fried. Wash the parsley under running water and shake the bunch. Pass the garlic through a press. Add herbs and garlic to sour cream and mix everything thoroughly. Salt the sauce and season with black pepper.
Arrange the chicken and sautéed mushrooms in the pots and top them with the sour cream sauce. Grate the cheese on a coarse grater and sprinkle on the dish. Place the pots in the oven (do not cover with lids). Roast the chicken with mushrooms in a hot oven for 15 minutes at 180 ° C.
