Step 1

Sprinkle flour on top of a table or large cutting board and make a depression in the middle. In a separate bowl, mash the yeast with a fork and cover with warm milk.

Add a pinch of vanilla, sugar, some salt, eggs and diluted yeast to the flour. Mixing the ingredients thoroughly, knead the dough with your hands. It must be kneaded until it begins to peel off from your hands. Donut dough should be elastic and soft. If the dough is tight, you can add a little warm milk to it. If too soft, you can add a little more flour.

Form the dough into a ball, transfer it to a bowl and cover with cling film or a towel. Soak the dough for about 30 minutes. When it doubles in size, transfer it to a table surface or a wooden board, after sprinkling it with flour. Pound the dough several times, then roll out a layer about 1.5 centimeters thick from it.

Using a glass or a special shape, cut the layer into round cakes, then cut holes in their center with a small glass. Combine the rest of the dough, roll out and cut the donuts again with a glass.

Take a deep skillet with a thick bottom, pour vegetable oil into it and heat well over medium heat. There should be enough vegetable oil for the donuts to float in. You need to fry them at the same time for 3 or 4 pieces. Fry donuts on both sides until golden brown over medium heat, no more than 2 minutes.

Step 6

Remove the fried donuts with a slotted spoon and place on paper towels to remove excess oil.

Step 7

After the donuts have cooled, sprinkle with powdered sugar. You can decorate them with lemon sugar or chocolate icing. To make the icing, whisk 120 g of icing sugar with 4 tablespoons of lemon juice, dip each donut in the mixture and let set. For a chocolate coating, melt a bar of chocolate in a bain-marie and successively dip each donut in the icing and let it set.
