As a rule, pork knuckle is very fond of cooking in Germany and the Czech Republic. There it is baked in the oven and served with sweet and sour sauce. It's easy to cook pork knuckle in Russian. The dish will turn out to be very fragrant, tender and tasty.

- carrots (1 pc.);
- cabbage pickle (1 cup);
- sauerkraut (1 kg);
- sweet pepper (1 pc.);
- onions (1 pc.);
- vegetable oil;
- tomato paste;
- salt

Instructions
Step 1
Rinse the pork knuckle well and dry it using paper napkins. Pour water into a saucepan and bring to a boil. Dip the pork knuckle there, salt the broth a little. Boil it for 1-1.5 hours. Gently remove the finished pork knuckle from the broth and cool. Use a sharp knife to cut it into small pieces.
Step 2
Wash carrots, peel and chop on a coarse grater. Cut the onions into small cubes. Wash the bell peppers, divide into two and remove the stalk and seeds. Chop it into strips.
Step 3
Pour vegetable oil into the pan (1 tablespoon). Heat it over low heat. Add vegetables and tomato paste to a preheated skillet. Fry this consistency for 10-15 minutes, stirring regularly.
Step 4
Chop the sauerkraut. Place all ingredients in a deep saucepan in layers. Put in the sauerkraut first. Next are pieces of pork shank. Line the top and sides of the saucepan with the rest of the sauerkraut.
Step 5
Dissolve the cabbage brine in equal proportions with boiled water. Pour the mixture into your dish. Place the vegetables with tomato paste on top of the pork shank and sauerkraut. Place a few allspice black peppercorns on top. Cover the saucepan with a lid and place over medium heat. Simmer the dish for an hour, adding a little water if necessary.
Step 6
Serve the pork knuckle hot, putting 2-3 tablespoons of the prepared dish in portions for each guest on a plate. Bake potatoes in the oven as a side dish. It goes well with pork knuckle and sauerkraut. Decorate the finished dish with fresh herbs and vegetables. This recipe will definitely appeal to your loved ones, friends and family.
