Panini with figs

Panini is an invention of Italians - who like to eat hearty, tasty and without spending too much time on cooking. This is a closed sandwich, which means you will need one small whole grain baguette or two slices of the same bread, plus:

- 2 fresh, ripe figs;

- 30 grams of feta cheese;

- ¼ cup of grated mozzarella cheese;

- salt and black pepper;

- 1 tablespoon of olive oil.

Cut the baguette in half, but not completely, and open it like a book, or simply lay two slices of bread side by side. Sprinkle the mozzarella evenly, cut the figs into slices and place on a sandwich, sprinkle with salt and pepper, crush the feta. In a skillet, heat half the oil and lightly sauté the bottom of the baguette over low heat until the cheese begins to melt. Add the other half of the oil and fry the panini on the other side.

Toast with apples and shallots

For these toasts you will need:

- 8 slices of whole grain bread;

- 1 apple;

- 1 head of shallots;

- 100 grams of blue cheese;

- 50 grams of peeled roasted walnuts;

- 2 tablespoons of chopped parsley;

- salt and pepper.

Cut the apple in half, remove the center and grate the pulp. Combine grated apples with herbs, crumbled cheese, nuts, and chopped onions. Apply the resulting mixture to the bread, smooth with the back of a spoon and place the toasts in an oven or microwave preheated to 160 ° C. Cook until the cheese starts bubbling.

Toast with grapes

Grapes are a rich source of various vitamins, as well as potassium, calcium, folate, iron, and selenium. You will need:

- 2 cups seedless red grapes;

- 100 grams of soft cheese, better than goat;

- 1 tablespoon of honey;

- salt and chopped parsley.

Place the grapes on a baking sheet lined with parchment, sprinkle with a pinch of salt. Bake at 160 ° C for about 20 minutes, until the berries are shriveled and caramelized. Toast a slice of whole grain bread in a toaster, spread it with soft cheese, add grapes, sprinkle with herbs and sprinkle with honey.

Egg and spinach toast

For these toasts, take:

- 4 slices of square whole grain bread;

- 4 handfuls of fresh greens of spinach;

- 4 quail eggs;

- a handful of grated cheese such as cheddar, parmesan and the like;

- vegetable oil;

- salt and pepper.

Rinse and dry the spinach well. Heat oil in a saucepan, season with salt and pepper, and fry the spinach, cut into ribbons. Spinach cooks very quickly, so stir fry for 3-4 minutes. Line a baking sheet with parchment and place the bread slices on top of it. Place the spinach on top, making a small indentation in it. Break an egg into each nest. Season with salt and pepper, sprinkle with cheese and bake in an oven preheated to 160 ° C until the eggs are cooked.
