Step 1
First, peel the eggplant, then cut the fruit lengthwise and remove the seeds. Cut the eggplants into cubes, put in an enamel or glass container, mix with salt and cover with cold water. Leave the eggplants in this form for about half an hour. During this time, the water in which the pieces of fruit are soaked will darken, and the eggplant pulp will lose its bitterness.
Step 2
Now you need to drain the water by transferring the eggplants to a colander, rinse under running water to remove the salt as much as possible, as well as the seeds remaining after preliminary cleaning. The washed eggplants must be wrung out with your hands to free them from excess water.
Step 3
Put the prepared eggplants in a bowl, sprinkle with lemon juice, mix. Add the garlic, after passing it through a special press. Put finely chopped greens here, then season with a mixture of vegetable oil and honey.
Vegetable oil, you can take unrefined sunflower or walnut oil.
Serve the raw eggplant appetizer right away, or keep it in the refrigerator for 30 minutes or more.
