In the summer, when vegetables ripen in the beds every now and then, various light meals from them, such as salads and snacks, should be included in your diet. Various vegetables are suitable for cooking: carrots, onions, zucchini, celery, radishes, cabbage, cucumber and even eggplant. Eggplants are usually fried. Therefore, dishes with them are fatty and high-calorie. But if this vegetable is cooked and used as the main ingredient, then you can prepare a very light and healthy snack.
It is necessary
- - eggplants 3 pcs.
- - bell pepper 3 pcs.
- - onion 1 pc.
- - garlic 2 cloves
- - finely chopped greens
- - apple cider vinegar (6%) 4 tbsp. spoons
- - sugar 2 tsp
- - olive oil 7 tbsp. spoons
- - salt and pepper to taste
Instructions
Step 1
Cut the eggplants into large cubes or wedges and boil in salted water.
Step 2
Chop the pepper and onion into strips. Chop the garlic finely.
Step 3
Put all vegetables in one container along with herbs.
Step 4
Prepare the dressing: mix the vinegar and sugar, adding salt and pepper to taste. When all the ingredients are well mixed together, add olive oil.
Step 5
Fill the vegetables with dressing, mix thoroughly and send the snack to brew in the refrigerator for at least three hours. A light summer meal is ready.
