Avocado and shrimp appetizer
In a blender, combine the pulp of a ripe avocado, salt, lemon juice, a few drops of mustard, and a spoonful of olive oil. Spread this mixture in a thick layer on the crispy baguette slices, and top with a slice of cherry tomato and boiled shrimp. It will turn out bright and very tasty.
Pink tomato and oregano appetizer
Wash pink tomatoes well and dry on a towel. Then cut them into medium-sized wedges and arrange them nicely on a large, flat platter. Grind a large amount of oregano separately. Just before serving, season with salt, oregano and lemon juice. This appetizer goes well with tequila.
Stuffed tomato appetizer
Wash small firm tomatoes, cut off the top and carefully remove the pulp from them with a teaspoon. Then prepare the filling. To do this, combine grated cheese, mayonnaise, lettuce and green onions. Stuff the tomatoes with this mixture and refrigerate for an hour. After the allotted time, remove, put on a plate covered with lettuce leaves, and serve on the table to guests.
Zucchini rolls with curd filling
Cut the zucchini into thin strips, salt, roll in flour and lightly fry them in a little vegetable oil. Then spread them out on a thick napkin to remove the grease. In a separate bowl, combine the curd, the herbs of Provence and some olive oil. Spread each strip with this mixture, put a couple of arugula leaves on top and wrap everything in a roll, fastening its edges with a toothpick.
