It is important not only to choose high-quality meat, but also to prepare the right marinade, so that every piece of kebab will melt in your mouth.
Marinade with pomegranate or grapefruit
Grapefruit and pomegranate are ideal fruits for making a marinade. They will make the meat tender, juicy and delicious. Grapefruit marinade is very easy to prepare: for every kilogram of meat, you need to take 500 ml of pomegranate juice, the crust and grain of one pomegranate, salt, pepper and onions to taste. All ingredients for the marinade must be mixed in a bowl, add pieces of meat and leave for 2-3 hours. Add some coriander and cumin if desired. Grapefruit marinade is even easier to prepare as it only requires the juice of 1 grapefruit and 50 g of finely chopped cilantro per kg of meat. Salt and pepper are added to taste. The meat in this type of marinade should lie down for at least 5-6 hours.
Beer Marinade
Beer is a commonly used marinade ingredient and must be draft beer. An alternative to beer is homemade kvass. Marinade is prepared at the rate of 1.5 liters of beer per 1 kg of meat. Salt and pepper to taste. To make the meat as juicy as possible, you need to marinate it for 2-3 hours.
Olive marinade
Even tough meat will melt in your mouth with olive oil. This marinade option is suitable for those who love beef, since initially it is not very suitable for kebabs due to its hardness, but olive oil will correct this deficiency. To prepare the marinade, per 1 kg of meat, mix 50 ml of olive oil with salt, pepper, a pinch of dry basil, rings of a medium onion and pieces of one sweet pepper. 6-7 hours is the optimal time during which the meat should be marinated.
