Eggplant dishes are a favorite among many families. This vegetable is fried, baked, salads are made from it, etc. A spicy eggplant appetizer is prepared quickly, does not require special expenses, and tastes very much like pickled mushrooms.
This savory appetizer will undoubtedly be appreciated by all family members, and it is not a shame to serve it on the festive table. In addition, if you put it in a sterile jar, then it will be stored in the refrigerator for a couple of weeks. If you leave the appetizer for soaking overnight, or for a day for dinner, then the eggplants will be saturated with the aroma of garlic and herbs, and the taste of the dish will be richer.
To prepare snacks you will need:
- eggplant - 1 kg;
- garlic - 1/2 large head;
- dill - a large bunch;
- table vinegar 9% - 5 tbsp. l;
- salt - 1 tbsp. l;
- vegetable oil - about a glass;
- water.
We wash the eggplants, remove the tails and cut into cubes about 1.5 * 1.5 cm.
Pour water into a large saucepan, pour in vinegar and add salt, bring to a boil. Put chopped eggplants into boiling water and cook for about 5 minutes over high heat. Then we put the vegetables on a sieve or colander and leave all the liquid to glass and the eggplants to cool down. This will take at least half an hour.
We sort out the dill, rinse it, shake it several times to remove water, cut it into pieces, size at our own discretion. Peel the garlic, chop and mix with dill and cooled eggplants and vegetable oil. We put the appetizer in a jar or salad bowl with a lid for soaking, and then serve.
