Kefir dough is a good alternative to yeast dough. It also turns out to be magnificent, but does not require long preparations and waiting. Are you going to cook dumplings, pies, pizza, bake pancakes or cookies, but time is short? Make a quick dough by choosing the appropriate recipe.
Quick recipe for kefir dumplings
Ingredients:
- 3 tbsp. flour;
- 150 ml of kefir;
- 1 tsp soda;
- 1/2 tsp salt.
Cook products made from kefir dough should be no more than a minute, otherwise it will become tough.
Combine flour, baking soda and salt in a large bowl. Pour kefir there in small portions, stirring in loose ingredients. Knead the non-sticky dough, roll into a large ball and cover with a towel. Leave it to "rest" for 15-20 minutes while you cook the filling.
Kefir dough for pies and pizza
Ingredients:
- 4 tbsp. flour;
- 200 ml of kefir;
- 120 ml of vegetable oil;
- 2 chicken eggs;
- 1/2 tsp soda;
- a few drops of vinegar;
- 1 tbsp. Sahara;
- 1 tsp salt.
For the kefir dough for pastry, take another spoonful of sugar and a little vanillin.
Beat eggs with vegetable oil. Dissolve the salt and sugar in the kefir and slowly add it to the egg mixture, stirring it continuously and quickly with a whisk. Quench the baking soda with vinegar directly in a teaspoon and place in the prepared mixture. Gradually add flour there, transfer to the table and knead a tight dough. Let it rest for 10 minutes, roll out and cook pies or pizza with hearty toppings.
Kefir dough for pancakes
Ingredients:
- 1/2 tbsp. flour;
- 200 ml of kefir;
- 30 ml of vegetable oil;
- 1 tbsp. Sahara;
- a pinch of salt;
- 1 tsp soda.
To prepare the dough, kefir must be at room temperature, otherwise it will not turn out fluffy. If in a hurry, slightly heat the fermented milk ingredient in the microwave or on the stove.
Combine flour with salt and sugar, vegetable oil and kefir and beat well with a whisk or mixer at low speed so that no lumps remain. The dough on kefir for pancakes should be like thick sour cream in consistency. Stir the baking soda in it just before baking. Fry the pancakes in a well-heated heavy-bottomed skillet.
Shortcrust pastry on kefir
Ingredients:
- 5 tbsp. flour;
- 400 ml of kefir;
- 100 g margarine;
- 1 chicken egg;
- a pinch of baking soda;
- 1, 5 Art. Sahara.
Remove the margarine from the refrigerator 20 minutes before cooking. Chop it finely with a knife and mix quickly with flour. Add kefir, egg and soda, then add sugar. Stir everything thoroughly and knead the dough until it stops sticking to your hands. Wrap it in plastic immediately and put it in the freezer until the fat has melted, for 10-20 minutes. Use it to make cakes, cookies, or sweet pie with berries, fruits, or cream.
