Step 1
First, take fresh herbs, rinse them thoroughly in cold running water. Hang it down with leaves in a cool, dark place. Can be left in the refrigerator. The greens must dry completely before cooking, otherwise the filling may become thinner and the cake will turn sour.
Step 2
Heat the cream a little in a water bath, but do not boil. Pour the cream into a deep bowl and add 100-150 ml of warm boiled water to it. Add yeast and sugar, whisk. Add the sifted flour in small portions. Melt the butter in a water bath, remove and cool a little, then add to the dough, add a little salt and stir. Knead the dough, put it in a bag and leave to rise for half an hour.
Step 3
Rinse the potatoes thoroughly, peel, cut into several pieces, transfer to a saucepan, pour a little salted water and cook until they become soft. Remove from heat and let cool slightly, then mash with a fork. Do not completely drain the water. Add sliced cheese and sour cream to the potatoes, mix everything. Add thyme and pepper. Stir again.
Step 4
Roll out the dough thinly and place in a mold. Finely chop the greens and put on the dough, top with the filling with potatoes in an even layer. Cover the cake with dough and level. Make a small incision in the middle so that the cake will not bulge. Place the pie in a well-preheated oven and bake for 20 minutes.
