Cherry sauce

Ingredients: pitted cherries 150 g, dry white wine ½ cup, broth ½ cup, starch 1 tbsp. spoon, 1 teaspoon sugar, black pepper and salt to taste.

Put the berries in a saucepan and put on fire, bring to a boil. The cherries should give juice. Add sugar and chop the berries with a blender. Dissolve the starch in the broth, combine it with cherry puree and wine. Salt, pepper and again put on a quiet fire for 10-15 minutes. Cool and serve with the meat.

Cherry sauce goes well with veal and pork.

Gooseberry sauce

You will need: gooseberries 250 g, sugar 2 tbsp. spoons, corn starch 1 tbsp. spoon, cream ½ cup, salt ¼ teaspoon, water 2 cups.

Preparation: boil the gooseberries in water, add sugar, then rub through a sieve. Add the starch diluted with cream to the puree, add salt and bring to a boil.

This sauce is perfect with chicken or fish.

Cranberry Sauce

Ingredients: cranberries 200 g, sugar 4-5 tbsp. spoons, salt ¼ tsp, red ground pepper to taste, water 150 ml, butter 15 g.

Pour the berries into a saucepan, add salt, sugar, pepper, pour in water and put on a low heat. Cook until thickened for 15-20 minutes. Add butter at the end. Stir and cook for another 5 minutes. Cool and serve with red meat or duck.

Black currant sauce

You will need: black currant 1 glass, red dry wine 100 ml, water 100 ml, 1 tbsp. spoon of sugar, 1 teaspoon of salt, 50 g of butter, black pepper to taste.

Melt the butter in a saucepan along with the water and sugar. Then we send the washed berries there and fill it with wine. Cook for 5-7 minutes, salt and pepper. You can add some cloves. It will add a special piquancy to the sauce. Simmer for another 5 minutes, remove from heat, let cool slightly and rub through a sieve.

Spicy raspberry sauce

Ingredients: raspberries 400 g, vegetable oil 2 tbsp. spoons, 2 cloves of garlic, 2 hot peppers, apple cider vinegar 100 ml, onion, ½ teaspoon of salt, sugar 100 g.

Preparation: Heat oil in a saucepan, add finely chopped onion and fry until soft. Add peeled and diced peppers. Pass the garlic through a press and send to the pan. Simmer, stirring occasionally for 5-7 minutes. Then add the berries, wait for a simmer and cook for another 3-4 minutes. Then add the rest of the ingredients (salt, sugar, vinegar). Cook over medium heat for another 15 minutes until thickened. Serve with meat both hot and cold.
