Step 1

Place a 3-liter pot of water on the stove. While it is simmering, prepare the vegetables. Rinse potatoes and carrots well, peel. Cut the potatoes into large cubes or strips. Once the liquid has boiled, dip the chopped potatoes into the container. To keep it warm, cook the dish over medium heat. Grate the carrots on a coarse grater or cut into small cubes. Chop the onion thinly and fry in a pan with the addition of vegetable oil until golden brown.

Combine the onions and carrots and continue to brown. When the carrots turn light orange, place the vegetables in the pot with the potatoes. Season with salt and spices to taste. You can add scented herbs such as savory or marjoram to the soup.

For a rich taste, add any frozen or fresh vegetables to onions and carrots. These can be peppers, corn, or green beans. To prepare cheese soup, take exactly processed cheese, as when heated it becomes smooth and evenly distributed. Grate the product on a coarse grater. To make it easier to do this, first put it in the freezer for 10-15 minutes.

Once the potatoes are half cooked, add the grated processed cheese into the soup. Do not put cheese in large pieces, as it will take a long time to melt.

After the grated cheese has been placed in a saucepan, turn the heat down, as with a strong boil, the cheese will brew and collect into lumps. When the curds are completely melted and the consistency of the soup is smooth, add finely chopped fresh herbs.
