Melt the butter and pour into the product, add salt to improve the taste, as well as any spices of your choice (cumin, dill, etc.). After that, put it on the fire again and cook until it thickens. You can determine the readiness of the cheese by the formation of a homogeneous thick mass.

Put the resulting cheese mass in a container, previously greased with butter, and put on a certain place in a cool place. After cooling, the homemade cheese is completely ready to eat.

To make goat cheese, put the goat milk on the fire and heat until bubbles begin to appear and the milk froths. After that, remove from heat and add the lemon juice, which is used as a sourdough according to the recipe. Lemon juice is used in the following proportion: for 1 liter of goat milk, add 1/3 cup of lemon juice.

Wait 10 minutes, during this time the milk should curdle under the influence of the juice. Strain the resulting product through several layers of cheesecloth laid out in a colander. Tie the remaining part of the cheese in the gauze in a knot and hang to drain over the pan.
