The soup is very tender and insanely delicious. You can serve this soup, the key ingredients of which are leeks and onions, with croutons. White wine can be used as a drink.
Ingredients:
- Leeks (white part) - 4 pcs;
- Potatoes - 4 pcs;
- Strong meat broth - 1 l;
- Onion - 1 pc;
- Parsley - several branches;
- Butter - 10 g;
- Thyme - 1 branch;
- Heavy cream - 100 g;
- Bay leaf - 1 pc;
- Freshly ground pepper and salt;
- Chives are a bunch.
Preparation:
- You need to start cooking with the preparation of the onion. Peel the onion and chop it into very thin slices. Wash only the white part of the leek and cut into thin round pieces. Melt the butter and fry the leeks in it over the lowest heat. In this case, it is very important that the onion does not change its color.
- Pour strong broth into a saucepan. Peel and dice four potatoes. Pour the potato cubes into the broth. Take all the sprigs of herbs: leek leaves, parsley, thyme, and connect them with a string into one bunch. Put this bunch in broth. Throw a leaf of bay leaf there. Boil the broth until the potatoes are tender.
- Remove a bunch of herbs from the broth, and take out a bay leaf. Rub the soup through a sieve or food processor. Pour back into the saucepan. Add heavy cream to the resulting mashed mixture and bring the soup to a boil. Sprinkle the puree soup with salt and pepper as you wish. You can add more spices to taste.
- Now you need to cut the chives into very small pieces. Soup is best served hot. However, depending on the season, this soup can be served chilled. Top the Vichy soup with chopped chives. Serve with croutons or cheese rolls.
