It is necessary

    • For the test:
    • - 2 glasses of milk;
    • - 1 kg of flour;
    • - 50 g fresh or 10 g dry yeast;
    • - 7 eggs;
    • - 1 cup of sugar;
    • - 300 g butter;
    • - 200 g of raisins;
    • - 0.5 tsp salt;
    • - 0.5 tsp vanillin.
    • For syrup:
    • - 0.75 glasses of sugar;
    • - 1, 75 glasses of water;
    • - 6 tbsp. l. dry red wine or 3 tbsp. l. cognac.

Instructions

Step 1

Heat milk until warm, sift flour. Dissolve yeast in 1 glass of milk. Add 3 cups flour. Knead the dough. It should be thick enough. Roll the dough into a ball and make several cuts on one side. Pour 2-2.5 liters of warm water into a saucepan. Dip the dough in water, cover the pan with a lid and leave in a warm place for 40-50 minutes. During this time, the dough will double in volume and float up.

Step 2

Use a slotted spoon to remove the dough from the water and transfer it to a deep bowl. Separate the yolks from the whites. Mash the egg yolks with sugar and vanilla until they are white. Whisk the whites into a thick foam.

Step 3

Add egg yolks with sugar, whites, salt to the dough. Pour in 1 more glass of warm milk. Stir and add the remaining flour. Knead the dough until smooth. Add whipped butter to it and stir well. Margarine can be used instead of butter. Cover the bowl of dough with a tea towel and place in a warm place. Wait for the dough to double in size.

Step 4

Stir the raisins into the dough. Grease the molds with vegetable oil. Pour the dough into them halfway up and leave to rise in a warm place. Preheat the oven to a temperature of 160 degrees C. When the dough fills 3/4 of the mold, gently, without shaking the molds, move the rum grandma to the oven and bake for 50-60 minutes. Turn the tins carefully while baking, otherwise the dough will settle.

Step 5

Boil the sugar syrup. Pour sugar into a saucepan and pour in hot water. Stir until sugar dissolves. Put the saucepan on the fire and bring the syrup to a boil over high heat. Skim off the foam. Add wine or cognac to the cooled sugar syrup.

Step 6

Remove the finished muffins from the molds and place them sideways on a plate. Pour sugar syrup on all sides of the completely cooled rum grandma. If desired, coat the top with fondant or powdered sugar.
