When buying raisins, give preference to dried fruits that have a matte and fairly dark surface. The golden amber berries, so appetizing in appearance, are actually treated with sulfur antihydride. This preservative is approved for use by GOST, however, the benefits of raisins containing sulfur are highly questionable. The fruits of light grapes, when properly dried, acquire a dark brown color, and blue varieties turn black with a slight bluish tint. Better buy raisins with stalks. The tails remaining on the berries indicate that they were not mechanically processed, and the skin remained intact.

Often, raisins are treated with wax, various organic oils, paraffin - so that the berries do not dry out and do not stick together. Such components form a resistant film on the raisins, which can be removed only under the influence of hot liquid. Heat the water to a temperature of at least 60-70 degrees and rinse the raisins thoroughly in it. Throw the berries on a sieve or place in a colander. Then soak the raisins in a deep dish with warm water for 20-30 minutes. Remove the fruit sieve and let the remaining liquid drain.

Raisins, intended for dessert or baking, can be soaked in a weak alcohol solution. This procedure will help restore the desired moisture level to the fruit and give them a pleasant aroma. Mix purified warm water with alcohol in a proportion of 25-30 g of alcohol per liter of water. Place the raisins in the solution for 30-40 minutes. Place the berries in a sieve and wait for excess water to drain. After that, place the berries in a glass container and fill with wine or rum so that the amount of alcohol does not exceed the volume of the raisins. For full impregnation, leave the fruits for 6-8 hours, stirring the solution periodically.

Step 4

Raisins drenched in wine can be stored for some time in the refrigerator in a hermetically sealed container. Before using, remove a small amount of berries from the container and place them in a thin layer on a sieve. Wait for the remaining wine to drain and let the berries dry.
