Ingredients:

  • 2 processed cheeses;
  • 400-450 g fresh or frozen mushrooms;
  • 1 onion head;
  • 200 g cream;
  • 450 g broccoli;
  • a couple of medium-sized carrots;
  • favorite spices (for example, Provencal herbs).

Preparation:

  1. First you need to prepare the carrots and onions. To do this, they must be washed and peeled. Then, using a sharp knife, the carrots are cut into thin circles. The onion can simply be cut into 2 pieces.
  2. Then a saucepan is placed on the hot stove, into which a small amount of water is poured. Pour vegetables into the container only after boiling water. After the carrots and onions have been cooked a little, broccoli is added to them, previously divided into inflorescences.
  3. The champignons should be washed and cut into large enough pieces. Then the resulting mass must be divided into two equal parts, one of which should be poured into a saucepan to the rest of the vegetables.
  4. The rest of the mushrooms must be fried. To do this, a frying pan is placed on a hot stove and a little vegetable oil is poured into it. After it heats up, chopped mushrooms are poured out, which must be fried over low heat until tender. They can be slightly salted.
  5. In a separate deep bowl, you will need to combine the cream and cream cheese. The resulting mass must be mixed well, and it is better to beat slightly with a whisk.
  6. Then remove the onion from the vegetable broth. You can throw it away. The soup itself should be cooked further, adding the necessary spices.
  7. After the carrots are ready, pour the mixture of cream and cheese into the pan. Everything is thoroughly mixed. Then the pan is removed from the heat. The soup should be infused for 10-15 minutes, while the pan should be tightly closed with a lid. Then it needs to be chopped in a blender to a puree state.

During serving, sprinkle the soup with finely chopped herbs. Fried champignons are served separately. Croutons will also be a great addition. You should definitely like such a delicate, tasty and healthy dish.
