- 2 cloves of garlic;

Step 1
Recipe number 1. Grate the washed and dried duck with half a lemon inside and outside, then salt and pepper, carefully rubbing in the spices. While the duck is soaked in lemon juice, prepare the apples. Wash Antonovka, remove the cores and cut into large slices, pour over the juice from the second half of the lemon, mix thoroughly. Stuff the duck with the resulting slices, and sew up or chop the hole with wooden skewers. Place the poultry in a deep baking sheet and pour a glass of hot water into it. Bake in an oven preheated to 200 ° C for 2 hours, turning it over from time to time and pouring the juice on top. Mix cognac and honey and brush on all sides of the duck. Place in the oven again and leave for 10 minutes. When the duck is ready, remove the apples from it and serve, placing them on a dish with the bird.

Recipe number 2. Rinse the duck carcass thoroughly, dry and coat with the mixture, which is prepared as follows: peel and grate one apple, add chopped garlic cloves, ginger, soy sauce and wine. Chop the onion finely and combine with the mixture, mix thoroughly. Let the coated duck brew for 1, 5 hours. At this time, prepare the filling. Cut two apples into large cubes and chop the walnuts with a knife, mix and fill the duck with the mixture. Remove the core from the remaining apple and cut it into slices 5-6 mm thick. Grease a deep baking sheet with butter, put the chopped apple, and on top of it - the duck. Bake the poultry at 200 ° C for 1.5 hours, periodically pouring over the released fat. After that, grease the duck with liquid honey and put it back in the oven for half an hour. Put the bird on a dish and garnish with apple slices baked with it.
