  • - dried almonds - 100 g;
  • - dried melon seeds - 100 g;
  • - candied tangerine fruits - 75 g;
  • - candied melon - 100 g;
  • - dried sesame seeds - 100 g;
  • - sugar - 150 g;
  • - brandy - 2 tablespoons;
  • - dark soy sauce - 1/4 tablespoon;
  • - cold boiled water - 90 ml;
  • - corn oil - 50 g;
  • - rice flour - 75 g.

Instructions

Step 1

Combine alkaline water with ingredients such as molasses, corn oil, and baking soda. Mix everything thoroughly, then set aside and do not touch the resulting mixture for 4-5 hours.

Step 2

After the time has elapsed, add pre-sifted wheat flour and soy sauce to the mixture. Knead the resulting mass until it becomes homogeneous. This will create a very soft dough that needs to stand for at least 6 hours.

Step 3

After 6 hours, divide the dough into equal parts, then roll each into a ball weighing 50 grams.

Step 4

Chop candied fruits and walnuts into small pieces. Mix these ingredients together, then add almonds, melon seeds, sesame seeds, granulated sugar, as well as brandy, dark soy sauce, cold boiled water and corn oil to them. Mix the resulting mass properly and add rice flour to it. Mix everything again. So you've got the filling for Mooncakes. Divide it into 100 gram portions.

Step 5

Roll out the balls of dough lightly and place a portion of the prepared filling on them. Fix them carefully, and then put them in a special form for "Moon Gingerbread", after sprinkling with flour.

Step 6

Remove the Mooncakes from the molds and place them on a parchment-lined baking sheet. Send the dish to bake in the oven at 180 degrees for about 8 minutes.
