Step 1
Custard sauce without filling
Make a choux pastry gingerbread. From the specified amount of products, a product weighing about 900 g will be obtained. Put sugar in a saucepan and pour in water. Put the mixture on fire and simmer until the syrup stretches into a thick thread. Strain the syrup through a strainer, add oil, stir and cool to 80 ° C. Sift flour, add spices to taste (ground nutmeg, star anise, cinnamon, cardamom, coriander and allspice), as well as lemon zest. Pour flour into the sugar syrup in portions, stirring and rubbing the mixture continuously. It is important that no lumps form in the dough.
Step 2
Cool the kneaded dough, then add the egg, baking soda and knead everything until smooth. The dough should be soft, smooth and pliable. Put it on a baking sheet and use a rolling pin to roll it into a layer 10-15 mm thick. Brush off flour from the surface of the product. Whisk the egg yolk and brush over the gingerbread. Use a fork to apply a pattern to the surface - for example, a slanting cage. Make several punctures so that there are no bubbles on the finished product. Place the baking sheet in an oven preheated to 200 ° C. Bake the gingerbread for about half an hour, then cut it into rectangular pieces of any size.
Step 3
Pavement carpet
This product has a very unusual look due to the special cutting of the dough. Use any thick jam as a filling, preferably with a sour taste. The rug can be prepared in a simplified way without heating the dough piece. Put honey in a bowl, add softened butter, eggs and spices. Mix everything, add sifted flour mixed with soda in portions. Rub the dough thoroughly until it becomes soft and smooth.
Step 4
Divide the dough into two parts. Roll one into a layer 6-8 mm thick, put on a baking sheet and place in an oven preheated to 220 ° C. Remove the baked crust from the baking sheet, cool and spread with jam. Divide the remaining dough into small lumps, then roll them into balls the size of a nut. Grease a baking sheet with butter and place the balls close to each other on it to form a crust. Bake it in an oven preheated to 220 ° C for about 15 minutes.
Step 5
Chill the beaded crust and then place it on the jam-smeared layer. Press lightly on the top coat and coat it with hot fondant. It is prepared simply: mix sugar with water, bring to a boil and cook until the syrup stretches into a thick thread. Chill the syrup slightly and pour the liquor into it.
