First of all, when starting the process of making homemade lean whites, prepare the filling. Knead a tough dough from flour and water, knead well, put in a bowl and cover with cold water. Leave the dough in this state for half an hour.

Meanwhile, pour water into a saucepan, put salt, bay leaf, allspice, peppercorns, bring to a boil. You should get a fragrant salty broth.
Step 3
After 30 minutes, place the bowl under running cold water and painstakingly knead and stretch the dough. This will make the water very white. This is due to the fact that starch is washed out of the dough. Continue rinsing the dough until the water is completely clear. At this time, a yellowish lump will remain in your hands. Put this lump in a saucepan with previously cooked boiling broth. Simmer over medium heat for about half an hour. During this time, the lump will triple in volume and become loose. Take it out and cool. It turned out to be wheat meat or seitan.

The dough for the whites will be unleavened custard. To prepare it, mix flour and salt, in a separate large bowl, heat a mixture of water and vegetable oil to a boil. Pour flour and salt into the boiling mixture and stir quickly with a spoon. Remove from heat and cool slightly so that the dough can be handled but still hot enough. Knead the dough until smooth and smooth. Lean choux pastry is soft, but not sticky, quite elastic.
