Curd is a product obtained by fermenting milk. Due to the almost complete absence of milk sugar, cottage cheese is well absorbed and is recommended for almost everyone. The cottage cheese contains fats, proteins and carbohydrates, amino acids, folic acid, vitamins A, PP, C, group B, potassium, iron, phosphorus, etc. This product can be consumed in its pure form, but it is better to prepare several simple, inexpensive, but very tasty dishes from it.
Cheesecakes
We wipe half a kilogram of cottage cheese through a sieve or scroll it in a meat grinder with added sugar. Add flour, salt, egg, vanilla sugar to the resulting mass and mix everything well. Sprinkle the table with flour, spread the curd mass and divide into several equal cakes. We form a ball out of each, slightly flattened on both sides, roll in flour and fry in a well-heated pan in sunflower oil. Cheesecakes are eaten both cold and hot; sour cream is usually served with the latter.
Cottage cheese casserole
- cottage cheese -2 packs (400g);
- eggs - 4-5 pcs.;
- kefir -1 tbsp. any fat content;
- semolina - 2 tbsp.;
- sugar - 2-3 tablespoons;
- vanillin - ¼ tsp;
- baking powder - 1 tsp;
- raisins, dried apricots, candied fruits - optional.
Pour semolina with kefir and leave for at least 30 minutes, stirring from time to time. Put the cottage cheese in a deep bowl, add vanillin and baking powder (not soda!). We take the eggs, separate the whites from the yolks. Beat a strong foam from sugar and proteins. Add the yolks to the cottage cheese, knead the mass thoroughly. We shift the swollen semolina into a bowl of cottage cheese, mix (you can use a mixer), then pour in the proteins and knead again. In terms of consistency, the mass is not thick, this should not be embarrassing.
Grease the baking dish with butter and spread the mass. We bake in the oven for 30 minutes. You can put a saucepan with water under the mold, then the casserole will be more juicy. You can also bake the casserole in the multicooker using the Bake setting for 45 minutes. Important! You do not need to immediately open the lid of the multicooker, the casserole may settle. Better to wait 10-15 minutes.
Dumplings with cottage cheese
- cottage cheese - 300 g;
- milk - 1/3 tbsp.;
- eggs - 2 pcs.;
- flour - 1, 5-2 tbsp.;
- sugar - 2 tablespoons;
- butter - 30 g.
Pour milk into a bowl, add salt and 1 egg, beat. Add flour in small portions, mix thoroughly so that there are no lumps. The dough turns out to be quite steep. Prepare the filling from cottage cheese, sugar, butter and yolk. Roll out the dough into a thin layer, cut out circles from it with a glass, grease them with the remaining protein. Put the filling on each and pinch the edges. There are special forms on sale for making dumplings (dumplings), you can use them.
