Many are afraid to include lard in the diet, because it is too high in calories and contains a lot of cholesterol. This product can be harmful if you do not know the measures in quantity. And a few pieces a day will only bring health benefits. Lard on black bread is a classic of the genre, but it is worth trying to use this healthy product in cooking.
Why fat is useful
It contains arachidonic polyunsaturated fatty acid. It helps to increase immunity, regulate hormonal and cholesterol metabolism, and has a beneficial effect on the work of the heart.
Lard contains a sufficient amount of vitamins A, E, D. Like any fatty product, it has a positive effect on the lungs, which is especially important in the pandemic of coronavirus infection.

Lard pâté
This dish is also called lard or spread. It can be put on black bread and served with borscht.
You will need:
- 100 g salted lard;
- ½ head of garlic;
- ground black pepper.
Step by step cooking
- Pass the bacon (preferably homemade salted) through a meat grinder using a large wire rack.
- Squeeze the garlic with a press or grate on a fine grater.
- Combine ingredients, pepper and refrigerate. Serve chilled and spread over brown bread.
Chicken liver with lard
This is a great option for winter skewers in the oven. Chicken liver is very tender, it fries quickly, and in a duet with bacon it also saturates well.
You will need:
- 300 g chicken liver;
- 70 g lard;
- 3 cloves of garlic;
- ½ onion;
- ground black pepper;
- salt.
Step by step cooking
- Rinse the liver and cut into large pieces. Do the same with onions.
- Cut the bacon into squares. Both raw and salted will do, but it is better to take the former. If you have salted lard, do not overdo it with salt.
- Chop the garlic, add salt and pepper. Add to liver and mix well.
- Skewer the liver, alternating with onions and lard. Send to bake in the oven for 7 to 10 minutes.
Potemkin scrambled eggs
According to the legend, the favorite of Catherine II Grigory Potemkin loved this simple dish. True or fiction of the chefs, but scrambled eggs on lard have long been called Potemkin.
You will need:
- 2 eggs;
- 20 g salted lard;
- salt;
- green onions.
Step by step cooking
Cut the bacon into thin slices. For this dish, it is important to take lard with layers of meat, brisket is ideal. You can use smoked or bacon.
Place the slices in an unheated skillet. When the fat begins to melt, turn the pieces over to the other side. Lay out the greaves.
Crack the eggs into the skillet without damaging the yolk and season with salt. As soon as the protein grabs a little, place the greaves on top of it and sprinkle with chopped green onions.
