The explosion of cans during conservation is not uncommon. And it happens due to poor sterilization of containers or due to the presence of air cavities in the fruits.
Since cans with canned fruits explode due to insufficient sterilization and in the presence of voids in vegetables / fruits, in order to preserve the workpieces, it is necessary to better sterilize and select the fruits. Poor washing of vegetables / fruits and herbs can also lead to cans exploding, so before canning fruits, they should be rinsed as best as possible - ideally, change the water three times or more during washing.
What to do to prevent jars of cucumbers from exploding
If cucumbers are canned, then in order to avoid an explosion of cans, it is necessary to strictly observe the recipe and competently prepare vegetables and cans for the procedure. First, the cucumbers should be carefully selected (without voids inside). Usually fruits up to 10 centimeters meet this requirement; larger specimens are best cut into slices before salting or pickling. Secondly, it is imperative to rinse cucumbers and spices before tamping them into jars. Thirdly, the jars should be thoroughly sterilized, and after placing the cucumbers in them, pour them twice with boiling water, each time leaving it for 10-15 minutes, and only the third time pour the cucumbers with boiling brine. It is also worth noting that mustard seeds perfectly protect the jars from explosion, as they prevent the growth of bacteria. A three-liter jar requires only five to seven seeds.
What to do if cucumber jars explode
If all the same, the banks exploded, then you can save the blanks. To do this, remove the fruits from the jar, rinse them thoroughly, sterilize the container in which the fruits will curl, put new herbs and spices in it, tamp the cucumbers and fill them with a new prepared boiling solution. When re-rolling cucumbers into jars, it is advisable to add tomatoes - two or three pieces per three-liter jar.
