Lenten meals can be delicious and varied. Zucchini rolls with mushrooms are an excellent appetizer that can be prepared both on weekdays and on holidays.

It is necessary

  • - 2 medium-sized zucchini;
  • - 400 g of fresh mushrooms;
  • - 1 onion;
  • - 1 carrot;
  • - vegetable oil;
  • - salt.

Instructions

Step 1

Peel the zucchini. Remove the middle and cut lengthwise into slices about 5mm thick. Then boil them in boiling water for 2-3 minutes.

Step 2

Prepare the filling for the rolls. Boil the mushrooms in salted water, cut into small pieces and fry.

Peel the onions and carrots. Chop the onion, grate the carrots on a fine grater. Simmer the onions in vegetable oil until they are translucent, then add the grated carrots and save the vegetables until tender. Send the mushrooms to the fried vegetables, mix the mass, cover the pan with a lid and simmer everything together for 3-5 minutes. Season with salt to taste.

Step 3

Put one spoonful of filling on each plate of boiled zucchini, distribute evenly over the surface and roll into a roll. Fasten the edges of the zucchini with a toothpick or skewer.

Step 4

Place the rolls on a flat plate. Garnish with herbs, cherry tomatoes and olives.
