A light variation on the classic Spanish tortilla theme, perfect for a healthy diet and vegetarian dinner. Pampering yourself with such a spicy vegetable side dish with eggs is not forbidden for avid meat lovers - it goes well with beef steak.
It is necessary
- - 100 g of potatoes;
- - half of red sweet pepper or paprika;
- - half green sweet pepper;
- - 3 cloves of garlic;
- - 200 g of tomatoes;
- - 100 g of fresh boiled or frozen corn;
- - 4 eggs;
- - parsley, salt, black pepper.
Instructions
Step 1
Peel the potatoes and cut them into even slices. Peel the peppers from seeds and legs, cut into cubes, and chop the tomatoes. Chop the garlic finely.
Step 2
Place the potatoes in a deep frying pan with a spoonful of olive oil, add pepper and garlic, season and salt. Fry, stirring constantly.
Step 3
After 5 minutes, add corn kernels and tomatoes, stir and roast, covered.
Step 4
Beat eggs and finely chopped greens in a separate bowl, add salt to the egg mixture. When the potato slices are tender, cover them with eggs. Make sure everything is thoroughly soaked.
Step 5
Place the skillet in a 200-degree oven and bake for 2-3 minutes. You can continue to fry under the lid over low heat.
