Step 1
Before you start cooking pearl barley, pay attention to the time of its production. This is a very unpretentious product that can be stored for several years. However, the storage time significantly increases the cooking time.

To shorten the cooking time as much as possible, soak the cereals in water for 3-4 hours, and preferably overnight. Soaked pearl barley is much easier to heat treatment. Before cooking, the cereals are transferred to a colander and thoroughly rinsed under running water.
Step 3
Place the prepared cereal in a cauldron and fill it with water or broth. The ratio of cereal and water should be 1: 2. The cauldron is placed on a heated stove. After 3 minutes after boiling the water, the heating is reduced to medium and the barley is continued to cook, adding table salt to taste. By this time, pearl barley should have increased in volume, having absorbed water. Therefore, it is necessary to replenish the fluid. Pour into the cauldron a quarter of the water or broth used at the beginning of cooking.
Step 4
After boiling again, reduce the heat again. The groats should be steamed under a closed lid for about an hour. If the pearl barley has been stored for an especially long time, cooking at this stage may take up to 1.5 hours. The finished pearl barley should be soft and swollen. If there is no time to wait until the cereal swells, you can prepare pearl barley using an emergency method, which will take much less time. True, in this case, the taste of pearl barley porridge may be worse.
Step 6
Rinse pearl barley without presoaking under running water and place in a cauldron, flooding with water. Boil the barley on high heat until it boils. As soon as the water boils, drain it and fill the cauldron with a fresh portion of water. After that, continue to cook the cereal over medium heat. Drain the boiled water again and fill the cauldron with a new portion of water, which should be about 1.5 times more than barley.
Step 7
Cook the cereals over medium heat. After boiling water, add salt and cover the cauldron with a lid. Reduce heat to minimum. Thus, the cooking time for pearl barley can be almost halved.
