Often, Europeans mean hibiscus or rooibos by "red tea": in the name they take into account the color of the dry tea leaf. In China, they gave the name to red tea, starting from the color saturation of the brewed drink. But among experts in the labeling of tea varieties, it is customary to use Chinese terminology, therefore, "red tea" means Chinese red tea, which, by the way, has gained a reputation as a healing drink.
Chinese red tea has amazing aroma and delicious taste. It is considered an elite drink. As a rule, raw materials are collected from young tea bushes growing in the highlands. First, the collected tea leaves are dried (this process lasts up to 15 hours). The subsequent processing depends on the type of red tea. For example, dried tea leaves can be rolled tightly (with a machine or by hand) and squeezed so that the leaf releases the maximum amount of juice and is saturated with it. In another variety of red tea, only the edges of the leaf plates can be oxidized, leaving the inside of the leaves unchanged. The healing properties of red tea largely depend on the raw material fermentation technology. When exposed to heat, moisture and air, a chemical process takes place in tea leaves, as a result of which new chemical elements (for example, tea flavins) are formed, which are not present in fresh leaves.
