Mussels with cream and cheese
To prepare this dish, you need to take 0.5 kg of frozen mussels, 200 ml of cream, 100 g of any hard cheese, 1 processed cheese, 25 g of butter, 3 cloves of garlic, allspice (6-7 peas), 1 tablespoon of flour and 1 yolk. The mussels must be defrosted, peeled and rinsed thoroughly, then removed from the shells, put in salted water along with allspice and boiled for 3-4 minutes. When buying mussels, be sure to pay attention to their smell - it should not be unpleasant.
Then you need to prepare the sauce by passing the garlic through a press and mix it in a blender with cream, processed cheese, yolk, flour and butter until smooth. Cooked mussels should be put in a baking dish, pour over the sauce, sprinkle with grated hard cheese and put in the oven, preheated to 200 degrees for 20-25 minutes.
Try to cook mussels in shells - this requires 0.5 kg of mussels in shells, 2 tomatoes, 50 g of butter, 200 g of hard cheese, spices and 2 cloves of garlic. Boil well-washed mussels in salted water for 10-15 minutes and select only open shells, leaving one flap. Carefully separate the meat of each mussel from the flap and put back. Chop the tomatoes and garlic in a blender and pour this mixture over the mussels, putting a piece of butter in each shell. Then sprinkle the meat with grated cheese and bake in the oven for 20 minutes. Serve with white wine that maximizes the taste of the mussels.
Cooked mussels are recommended to be used as intended on the day of purchase, as they quickly deteriorate.
Pickled mussels
To prepare pickled mussels, you need to take 0.5 kg of mussels peeled from shells, 1 tablespoon of vinegar, half a glass of water, 1, 5-2 tablespoons of sugar, allspice, unmilled coriander, a bunch of fresh dill, salt and red bell pepper. Defrost the mussels, rinse, remove the shells and thoroughly clean the gills of dirt, algae and sand. Combine all other ingredients in a saucepan and heat over a fire until boiling.
Put the prepared mussels in a tall jar, pour the resulting sweet and sour sauce and place in the refrigerator for 2 hours. After this period, mussel meat can be consumed, serving it with cereals, mashed potatoes, salads, sandwiches and many other dishes. It is advisable to consume the appetizer as soon as possible, without leaving it in the refrigerator for a long time.
