It is necessary

  • Candied pumpkin:
  • - 1 kg of pumpkin;
  • - 2 liters of water;
  • - 14 g of baking soda;
  • - 1 glass of cranberry juice;
  • - 1, 2 glasses of sugar;
  • - 50 g of dark chocolate;
  • - 2 tbsp. tablespoons of fine granulated sugar;
  • - ground cinnamon or lemon zest.
  • Pumpkin Jelly:
  • - 500 g pumpkin;
  • - 2 teaspoons of powdered gelatin;
  • - 2 tbsp. spoons of water;
  • - 2 eggs;
  • - 1 glass of cream;
  • - a pinch of vanilla;
  • - gummies, cheese and raisins for decoration.

Instructions

Step 1

Candied pumpkin

Candied sticks are a healthy alternative to store-bought lollipops. You need to cook a treat 2-3 days before the holiday. Peel and dice the ripe sweet pumpkin. Place the pieces in a saucepan and cover with water mixed with baking soda. The pumpkin should soak for 5-6 hours, then discard it in a colander.

Step 2

Make a syrup. Pour cranberry juice into a saucepan, add sugar and heat until sugar dissolves. Place the pumpkin slices in the syrup, bring to a boil and cook for 5 minutes. Leave the mixture to infuse for 7-8 hours. Then return the pot to the stove and cook for another 5 minutes. Remove the infusion mixture again. After 8 hours, do the last 5-minute boil. Let the candied fruit cool.

Step 3

Use a slotted spoon to remove the pumpkin pieces from the syrup and place them on a baking sheet lined with wax paper. Combine fine granulated sugar with cinnamon powder or finely grated zest. Dip candied fruits in sugar and pin them onto long wooden skewers. In a water bath, melt the dark chocolate and pour it into a confectionery syringe with a fine nozzle. Draw a variety of faces for them on candied fruits, let the chocolate freeze. Pour salt or glass beads into glasses. Put several candied fruit skewers in each glass in the form of a bouquet.

Pumpkin jelly

You can make a very tasty and unusual dessert from pumpkin - jelly in the form of mini-monsters. Grate the pumpkin core on a coarse grater and simmer in a bowl with a thick bottom. Dissolve gelatin in water, add 1 tablespoon of hot cream.

Step 5

Mash the egg yolks with sugar, add the stewed pumpkin, gelatin and a pinch of vanillin. Whisk the egg whites and cream in separate containers. Add them to the pumpkin mixture, mix gently and place in silicone molds, oiled from the inside with odorless vegetable oil. Place the jelly in the refrigerator to set.

Step 6

When dessert is done, flip the jelly onto a serving platter. Make the eyes of the monsters from slices of cheese and raisins, planted on toothpicks. Garnish with snake-shaped gummies and serve.
