Instructions

Step 1

Pour milk into a saucepan. It is advisable to take an unenamelled container. A cast iron saucepan is perfect. Use country milk whenever possible, preferably steamed. Add sugar to the milk and mix everything. Put the milk and sugar mixture on the fire and cook until boiling.

Step 2

Add soda to the boiling mass. It will provide the condensed milk with a uniform consistency. Boil milk for 2-3 hours. Stir it constantly during cooking. As a result, it will decrease in volume by about a third and thicken.

Step 3

Pour the resulting condensed milk into a glass jar, cover its throat tightly with foil and place in a pot of water. Simmer the condensed milk for 2 hours over low heat. You do not need to stir it. However, care must be taken to ensure that it does not burn. Ready boiled condensed milk should be cooled before direct use. Store it in the refrigerator.

Try to make "dumplings" from store-bought condensed milk. To do this, you should take the "correct" condensed milk. Read the label carefully. The product should be free of vegetable fats and other additives. It should contain only whole milk and sugar. It is better if the condensed milk is made in accordance with GOST. A bad product will never make a good boiled condensed milk.

Step 5

Remove the label from the jar and place it on its side in a pot of cold water. It should completely cover the jar. Put the pan on low heat and cook the condensed milk for 1-2 hours. The longer you cook it, the darker and thicker it will become as a result. Monitor the water level at all times. It is imperative that it always completely covers the jar, so be sure to add it as it boils down. If this is not done, the bank can simply explode.

Step 6

Remove the condensed milk from the pan and let it cool. Do not open the can immediately as the contents are under pressure. If you can't stand to enjoy a prepared treat, place the jar under running cold water. This will cool it down faster. After that, you can safely open it. The finished boiled condensed milk should have a coffee color and a caramel flavor.
