For 4 servings we need
- Pork 500 g (ham, shoulder blade, cue ball aka entrecote, neck or tenderloin)
- Tomatoes 300 g (2 large tomatoes)
- Hard cheese 300 g (Dutch or Russian, preferably not very salty)
- Garlic 3 cloves
- Salt, pepper, pork seasoning
- Vegetable oil
- Parchment paper
Meat preparation
All of the listed cuts of pork will suit us, their preparation for further cooking is the same. We cut out visible large veins, do not be afraid if you need to separate small pieces of meat for this. After stripping, cut the meat into thin, flat pieces 5 mm thick. Cut thin enough, then sprinkle them with salt, pepper and pork seasoning.
We beat off the meat with a kitchen hammer. Meat is marinated in an unbeaten state, because thin beaten pieces are difficult to marinate evenly, the more we roll them, the more they disintegrate.
Do not be afraid to beat off very thinly, it is better to lay them out in 2 or 3 layers. The meat in the oven will be baked in one layer, but at the same time it will remain soft and easy to cut on a baking sheet.
Preparation for baking
Rub the cheese on a coarse grater.
Wash the tomatoes and cut them into thin rings.
Peel and squeeze the garlic through a garlic press.
Put parchment paper on a baking sheet so that the meat and cheese do not stick to the baking sheet.
Grease the parchment with refined oil, lay out the beaten and pickled pork in an even layer, if the baking sheet is large, then it is better to spread the pork in 2-3 layers on half of the baking sheet.
Pour the crushed garlic onto the meat and rub it over the entire surface of the meat. Put the tomato rings on top and sprinkle with cheese.
Time to bake
The oven must be preheated at 220 degrees. It is important to select the heating mode from both sides (top and bottom).
Put the pork in the oven for 20 minutes.
An important nuance, if you have laid out the meat in one layer and it is very thin, then the cooking time should be reduced to 15 minutes.
It can be served immediately with any side dishes and sauce suitable for meat.
