The best stew is obtained, of course, from rolled meat. Or try to choose a scapula, a loin, a fat neck from a private trader on the market. If you come across dry meat, add lard or internal fat to it.

For 5 kg of meat, you will need 2 kg of lard, black pepper, allspice, bay leaf one package at a time, ordinary, not iodized salt - to taste. Wash the meat, remove the streaks and films, cut into 3-4 cm cubes. The easiest way to cook stewed pork involves using the oven. Find a suitable saucepan and place the meat in it.

Set the temperature in the oven to 120-150 degrees. While heating, add bacon, bay leaf, pepper and salt to the meat, it is better to stack everything in layers. Place the dishes with meat in the oven, close the lid and simmer for 3-4 hours. The method is good because no additional measures are required - you just need to check in time so that the water does not boil away and the meat does not burn.

While the stew is cooking, carefully sterilize the jars and lids for them. Spread the prepared stew over them and cover with lids. Place in a calm place and cover with a warm blanket until it cools completely. Then store in a cellar or refrigerator.
