Chicken breast is good because it is low in calories, nutritious and does not require prolonged heat treatment. That is why dishes made from it are suitable for those who monitor their weight or do not want to spend a lot of time preparing dinner.
A beautiful and delicious chicken breast dish will turn out if it is stuffed and fried in a pan. For 2 servings, you will need the following products: chicken breast, 100 g of goat or Adyghe cheese, 3 sun-dried tomatoes, a clove of garlic, parsley, spices and olive oil.
In the absence of sun-dried tomatoes, you can take one fresh one. But it must be dense enough and it will be necessary to first remove the skin from it by pouring boiling water over it.
First, prepare the filling to make the dry white meat more juicy. Chop the garlic and parsley directly on the board, cut the tomatoes into cubes, crush the cheese. Sprinkle everything with olive oil, maybe a little lemon juice, salt and pepper and mix everything.
Separate the chicken breast from the bone, wash, dry on a napkin. Cut into 2 equal pieces, making a deep cut on the side of each. Put the prepared filling into it, fastening the edges of the "pocket" with toothpicks so that the filling does not fall out during cooking. Add a little salt on top.
Heat the olive oil in a skillet and fry the chicken breast in it until crisp over high heat. Then reduce the flame and cover the skillet with parchment paper soaked in water. Leave it on for 10 minutes.
Thanks to this method of cooking, the meat will "reach" inside and will not burn outside.
After the allotted time, take out the prepared stuffed breasts, put on a plate, remove the toothpicks and cut the meat across into 2 cm thick slices. Sprinkle with the remaining herbs and serve with fresh vegetables.
White chicken stewed in a creamy sauce is no less tasty. To do this, you need: chicken breast, 200 g of mushrooms, onion, 100 g of sour cream, 100 ml of cream, 1 teaspoon of flour, spices to taste, olive oil.
Cut the chicken breasts into small cubes, put them in a skillet with heated olive oil and fry until golden brown. Finally, add chopped onions to the meat. Meanwhile, in another frying pan, fry the mushrooms cut into plates until half cooked.
Combine all ingredients in a saucepan, salt to taste, add spices and flour, mix well. Then pour in warm cream and sour cream. Stir again and simmer for another 10-15 minutes over medium heat. Serve the finished dish with boiled asparagus, pasta or mashed potatoes.
Chicken breast can also be used to prepare a popular French dish - fricasse. For him you will need: boiled chicken breast, 100 g of any mushrooms boiled until half cooked, 2 tomatoes, a head of red onion, a glass of chicken broth, 100 ml of white wine and cream, 50 g of cheese, 1 teaspoon of Dijon mustard, 1 tbsp. a spoonful of brandy, salt and black pepper, parsley.
Cut the chicken breast and mushrooms into small pieces, chop the onion, remove the skin from the tomatoes and cut them into cubes. Mix everything, salt and pepper, fold into a small baking dish, pour over with wine and broth. Cook in oven for 20 minutes at 200 ° C.
In the meantime, prepare the sauce. Pour the cream into a saucepan, heat, add grated cheese, brandy and mustard, a little chicken gravy, mix everything and simmer for 5 minutes over low heat. Arrange the finished chicken fricasse on plates, pour over the sauce, sprinkle with chopped parsley and serve.
