Red and white fish cutlets are very delicious and tender. Plus, they're very easy to cook.

- - 300 g salmon fillet (trout is possible)
- - 200 ml of milk with a fat content of 3.2%
- - 1 loaf of white bread
- - 2 eggs
- - 2 medium onions
- - 1 cup of bread crumbs for roasting
- - a bunch of greens (parsley, dill, cilantro, etc.)
- - salt and pepper to taste

Step 1
The fish must be minced in turn. The result is red and white minced meat.
Step 2
The loaf must be broken into pieces and filled with milk, let it brew. At the same time, the onion should be presented until a light golden crust.
Step 3
The softened loaf must be squeezed out, mixed with onions and divided into 2 parts. One part, together with the egg and chopped greens, should be put in white minced meat, the other with an egg, but without greens - in red. Salt, pepper and mix everything.
Step 4
The process of sculpting cutlets begins. For this, a small and flat cake, the size of a palm, is formed from the minced meat.
Step 5
Put a piece of white minced meat in the middle of the cake.
Step 6
At the end, you need to wrap the white minced meat in red, thereby forming a ball, which should then be rolled in breadcrumbs and fried in a pan heated with oil for 3-5 minutes on each side.
Step 7
Cutlets are served as a side dish with rice or mashed potatoes. You can decorate the dish with a sprig of herbs.
