Everyone's favorite berry roll is prepared quickly and tasty. It consists of biscuit and berry filling combined with cream. It is not necessary to cook a white roll, you can make chocolate dough or zebra crossing, alternating black and white.
Ingredients:
- 35 g of frozen berries: blueberries, raspberries, blackberries;
- 65 ml of milk;
- 1 tsp baking powder;
- 45 g icing sugar;
- 2 eggs;
- 2 tbsp butter;
- 90 g flour;
- 125 g sugar;
- 110 ml cream;
- 2 egg yolks.
Preparation:.
- Put egg yolks, eggs and sugar in a deep bowl. Mix everything thoroughly. It is better to do this with a mixer to double the mass. Add sifted flour and baking powder to this. Knead the dough.
- Warm milk and butter separately. Then put a couple of spoons of dough in milk and pour back. Mix everything thoroughly.
- Place parchment paper on the baking sheet for baking. Then pour the resulting mass into it.
- Place a baking sheet with dough in an oven preheated to 190 degrees for 15 minutes. You don't need to keep the biscuit in the oven for too long, it should turn out soft, not dry. You can check the readiness of the biscuit with a toothpick.
- After making the biscuit, you can start preparing the filling. Whip the cream, mix with the powdered sugar. You do not need to heat anything, the cream is cooked cold.
- Cover the biscuit with a damp towel, and then remove the top layer from it.
- Spread the cream over the cake. Put the berries along one side. They can be used fresh or frozen. Then roll the sponge cake.
- It is necessary that it stand for several hours and soak. To do this, you need to send it to the refrigerator. You can decorate the top with anything, or you can leave it that way. We recommend pouring chocolate icing on top.
