During Lent, you can cook a lean version of brushwood. Sift 4 cups of flour with a slide, make a depression, pour in 7 tablespoons of sunflower oil and ¾ cup boiling water, in which you must first dissolve half a teaspoon of salt and a tablespoon of sugar.

In the classic recipe, you need to add a little brandy or vodka to the dough so that the brushwood browns better, is airy and crispy. If you replace the cognac with boiling water, the effect will be the same - the dough will be soft and plastic, and the brushwood will be light and appetizing. If you add an egg, the brushwood will be even tastier, but this, of course, is no longer a lean option.

Knead the dough, divide it into pieces and roll it into a flat cake 2-3mm thick. Cut strips 3 cm wide and 12 cm long, use a knife to cut a slot in the middle of each strip and thread the ends into it.

Fry the brushwood in a large amount of well-heated, but not steaming oil for 2 minutes on each side. Sprinkle the finished brushwood with icing sugar.
