If capelin is included in your diet as often as possible, then you can provide the body with natural iodine. And capelin in a salad is a very simple, original and tasty dish.
- 300 gr. cold smoked capelin,
- 3 pcs. potatoes,
- 1 small onion
- 2 pcs. pickled cucumber,
- salt, freshly ground black pepper to taste.
For refueling
- 3 tbsp. l. olive oil,
- 1 tsp dijon mustard,
- 1 tsp soy sauce,
- 1 tsp honey,
- 1 tsp lemon juice.
Clean the capelin, remove the head, fins and vertebral bone. Cut into small pieces.
Boil the potatoes in boiling water without peeling, cool, peel and cut into small cubes. Cut the pickles into cubes too. Put the potatoes and cucumbers with the capelin.
Peel the onion, chop and scald with boiling water, then pour over with cold water to remove the bitterness. Place in a colander, drain and add to salad. Season with pepper and lightly salt, mix everything well.
Prepare the dressing. Combine olive oil, mustard, soy sauce, honey and lemon juice in a separate bowl. Add to salad, mix well. Decorate the salad with herbs.
