To prepare a tender and bright roll, a juicy carrot is required, only without the characteristic taste of this root vegetable. There should be no earthy flavor, so be sure to try to find a carrot variety with a pleasant, subtle carrot flavor.

- - 160 g processed cheese;
- - 50 g butter;
- - 20 ml heavy cream;
- - 2 egg whites;

Step 1
Rinse fresh carrots, peel them, rub on a fine grater. Melt the butter in a frying pan, put the prepared carrots in it, simmer for 5-7 minutes under a closed lid. After that, transfer it to a deep bowl, add the egg whites, beaten with a pinch of common salt.

Cover a baking sheet with parchment paper, put the carrot mass on top of it. Since this mass does not spread over the baking sheet, you can lay it out in a square or rectangle without any problems. Just keep in mind that the layer should be about 7 mm thick.

Place the baking sheet in an oven preheated to 180 degrees. Cook for about 15 minutes. Then cover the carrot cake with a damp towel, let it cool slightly.
Step 4
While you can mix heavy cream with heated processed cheese. Remove the towel from the carrot layer, cover the carrot with a second sheet of parchment paper, turn it over, carefully remove the paper on which the cake was baked. Spread the cheese mass on the layer, leaving about 1 centimeter of free space around the edges. Gently roll the carrot roll, cool, cut into portions. Carrot roll is ready, serve this healthy dish for breakfast or lunch.
