In Spain, one of the main ingredients for cooking is rice. Without it, the country's national pride - paella - is unthinkable. But the Spaniards are not limited to one paella - each housewife is experimenting, adding a variety of ingredients to rice, each time creating more and more new dishes. One of them is rice with rabbit, chicken and vegetables.
How to Cook Spanish Style Rabbit Rice: Ingredients
- 300 g of round rice;
- water for rice in a ratio of 2.5 to 1;
- 300 g of chicken and rabbit;
- 250 g frozen or fresh green beans;
- 125 g frozen or fresh lima beans;
- 100 ml of olive oil;
- 2 cloves of garlic;
- 2 ripe tomatoes;
- a sprig of rosemary;
- saffron (several strands);
- 0.5 teaspoon of paprika;
- salt to taste.

Cut the chicken and rabbit into large pieces (or to taste). Heat oil in a heavy-bottomed saucepan. Add meat, fry on medium heat for 15 minutes until golden brown on each side.
Add both beans and peeled garlic. Fry for 8-10 minutes, stirring if necessary.
Peel and chop the tomatoes in a blender (grate). Add to the meat along with a sprig of rosemary. Mix the ingredients, simmer over medium heat to evaporate the liquid from the tomatoes, stir occasionally.
Remove the pan from heat, add the saffron and paprika, mix everything very well and return to the stove. Remove rosemary, salt to taste, add water (2.5 parts water to 1 part rice). Bring to a boil and after 5 minutes add the rice, spreading it evenly over the rabbit, chicken and beans.
Increase heat to maximum for 5 minutes, then reduce to minimum and leave for 15 minutes. After 15 minutes, remove the rice from the heat and let it stand for another 5-7 minutes before serving.
