The best way to cook meat in such a way as to preserve the maximum amount of nutrients is by boiling. This method is especially suitable for tough beef. Boiled meat can be served as a stand-alone dish, or can be used as an ingredient in a salad.
Proper cooking of meat
In beef, which, unlike pork, belongs to the category of dietary meat, often there are tight dense veins, which increase the cooking time, preventing the meat from boiling well and becoming tender. This should be taken into account when choosing beef for cooking. It is better to cook the meat in one piece, and the meat should be defrosted only gradually, without using any microwave ovens or ovens.
To make the beef softer, it is better to grease a piece of meat on all sides with dry mustard from the evening before. It takes about 1, 5 - 2 hours to cook beef for a salad. To check if the meat is ready, it is enough to pierce it with a fork: it should freely penetrate into the meat.
Boiled beef salad
To make a delicious boiled beef salad, take:
- boiled beef - 300 g;
- champignons - 250 g;
- pickled cucumbers - 3 pcs.;
- onion - 1 pc.;
- carrots - 1 pc.;
- mustard - 1 tablespoon;
- mayonnaise - to taste;
- salt to taste;
- pepper - to taste;
- vegetable oil - to taste.
First, peel the onion, cut into rings, divide each ring into 4 parts. Fry onions in vegetable oil until golden brown. Be careful, the onion burns very easily, stir constantly while sautéing.
Then rinse the mushrooms thoroughly, cut into thin slices and send to the pan, mixing with the onions. Fry over medium heat until the liquid evaporates. Cut the washed and peeled carrots into small strips and mix with mushrooms and onions. Fry for five minutes, stirring constantly. Add cucumbers cut into thin strips, black pepper and remove the pan from heat.
Cut the boiled meat into small pieces and divide into fibers. Add mustard to the meat, mix well so that the mustard saturates the beef. Mix all the ingredients, add a little salt if necessary. Season the prepared salad with mayonnaise just before serving.
You can also make a beautiful bright salad with boiled beef and bell pepper. It will require:
- boiled beef - 350 g;
- Bulgarian pepper of different colors - 2 pcs;
- champignons - 400 g;
- mayonnaise - to taste;
- vegetable oil - to taste;
- salt to taste.
Cut the cooled boiled beef into thin strips. Also chop the bell peppers. Then rinse the mushrooms thoroughly, cut into thin slices and fry in vegetable oil until tender. Combine all the ingredients, add salt to taste and a little mayonnaise.
