Mascarpone is an Italian cheese of white or cream color, high fat content. It is used for baked goods and desserts. Its mild creamy taste and delicate homogeneous structure make it more often used in sweet dishes. Especially common is the Tiramisu dessert recipe, which uses mascarpone cheese.

Cheesecake with mascarpone
Ingredients:
- mascarpone cheese - 500 g;
- cream 30% - 200 g;
- butter - 100 g;
- eggs - 3 pcs;
- vanilla sugar - 5 tsp;
- icing sugar - 140 g;
- shortbread cookies - 200 g.
For garnish: fresh strawberries and mint (or other fruits).
All ingredients should be at room temperature.
Grind the cookies into small crumbs and add softened butter. Then grind the crumb with butter.
Put the mass into a split form with a diameter of 22 cm and form sides with a height of at least 2 cm. Put in the refrigerator while the filling is cooking.
For the filling, combine the mascarpone with the icing sugar with a whisk until smooth. Gradually add the cream, mixing it with the mass. After that, introduce eggs one at a time.
Add vanilla sugar (or bean vanilla) and mix well. Wrap the form well with foil (so that water does not get into it later) and pour in the filling.
Then put the cheesecake in a baking sheet filled with water to the middle of the split form. He will cook in a water bath.
Bake in the oven at 160 ° C for 1 hour and 20 minutes, then remove, carefully detach from the walls of the mold and leave to cool, then put the cooled cake in the refrigerator (preferably overnight). Decorate with fruit and mint.
Tiramisu dessert recipe
Ingredients:
- eggs - 4 pcs.;
- mascarpone cheese - 250 g;
- sugar - 100 g;
- cocoa powder - a few tablespoons (30 - 50 g);
- grated chocolate - 50 g;
- strong cold coffee - 150 ml;
- Savoyardi cookies (or regular biscuit) - 200 g.
First you need to prepare the cream. To do this, you need to separate the whites from the yolks. Beat the whites with a pinch of salt. Beat the yolks and sugar separately until whitish, then add the mascarpone. Mix the protein and yolk masses. Add shredded chocolate.
Now you need to collect the cake. To do this, dip each cookie in coffee and lay in an even layer. Put half of the creamy mass on top, sprinkle with cocoa. Then re-lay the biscuit layer, following the same procedure with the coffee, and cover this layer with the remaining cream. Sprinkle cocoa on top. Then put the finished dessert in the refrigerator for several hours.
The dessert will look more like a cake if you replace the cookies with a biscuit.

Ingredients:

- natural yogurt - 2 tbsp. l.;
- different greens - 2-3 branches each (you can use dry);

- herbal vinegar - 2 tbsp. l.;
- salt pepper.
Remove the stems from the herbs, chop the leaves. Grate the garlic on a fine grater. Combine the mascarpone, herbs, garlic, yogurt and herbs with a blender. Then add mustard and vinegar. Add salt and pepper to taste.
