Many dishes are prepared from Italian mascarpone cheese, but it is just perfect for desserts. With a soft, airy structure and an unobtrusive creamy taste, it is an excellent base for a delicate cake, delicious pie, exquisite cream or mousse melting on the tongue.

Simple tiramisu with mascarone

Ingredients (for 6-8 servings):

- 250 g mascarpone;

- 250 ml 33% cream;

- 200 ml of water;

- 1 tbsp. instant or ground coffee;

- 2 chicken eggs;

- 100 g of icing sugar;

- 60 ml of amaretto liqueur;

- 24 sticks of savoyardi cookies;

- 1 tbsp. cocoa powder.

Brew the coffee with the indicated amount of water and let it cool. In a mixer bowl, combine the mascarpone, cream, eggs, icing sugar and 40 ml of liqueur. Whisk everything until smooth. Cut the cookies into halves, lightly soak them in the coffee with the leftover amaretto and place them evenly in portioned glasses or bowls. Top with the sweet mascarpone cream and sprinkle the tiramisu with cocoa powder.

Cheesecake with mascarpone

Ingredients (for 8-12 servings):

- 500 g mascarpone;

- 300 g of shortbread cookies;

- 200 ml of 30% cream;

- 150 g of high-quality butter;

- 250 g of sugar;

- 100 ml of water;

- 20 g of gelatin;

- vegetable oil.

Chop the cookies into crumbs using a blender and toss with melted butter. Lubricate the mold with vegetable oil, evenly distribute the resulting mixture over its bottom and sides and tamp well with the back of a spoon.

Soak gelatin in warm water for 15-20 minutes until swollen. Dissolve the sugar in the cream, add the mascarpone, gelatinous jelly and mix thoroughly. Cover the base of the pie with the filling and refrigerate for 4 hours. Garnish the cheesecake with berries or chocolate chips.

Mascarpone cream with strawberries

Ingredients (for 3-4 servings):

- 250 g mascarpone;

- 300 g fresh strawberries;

- 150 g icing sugar;

- 2 tbsp. 35% cream;

- mint leaves for decoration.

Sprinkle half of the caster sugar in the mascarpone and whisk. Without stopping whipping, add the cream there and mix everything intensively for another 5 minutes with a whisk or mixer. Wash the strawberries, cut into small pieces, cover with the remaining powder and set aside for 10 minutes, then drain the resulting juice. Collect desserts in irish glasses, alternating between berries and cream. Insert mint leaves into the top layer.

Chocolate mousse with mascarpone

Ingredients (for 4 servings):

- 200 g mascarpone;

- 100 g milk or white chocolate;

- 200 ml of 30% cream;

- 130 g icing sugar.

Break open a chocolate bar, melt in a water bath or microwave and let cool slightly. Rub the cream and icing sugar into a firm, airy mass. Stir in the mascarpone and chocolate paste alternately. Fill glasses with mousse and refrigerate for at least 3 hours.
