Meat “fingers” are rolls about 9 x 3 cm in size. You can serve them both as a main course and as a cold appetizer for a festive table. Pork or beef fingers are prepared. The main charm in them is the filling.

Instructions
Step 1
Prepare the tenderloin. It can be pork or beef. In the classic recipe, this is beef. It is tasty, juicy and low-fat, but it takes about an hour to cook, so you can use lean pork.
Step 2
Cut the meat into medallions, like into chops, about 1 cm wide. They should not be too small in diameter, so as not to get mini-fingers. Ideally 8-10 cm.
Step 3
Use a hammer to beat off the meat medallions to make them as thin as pancakes, but not full of holes. Your goal is to beat them off so that you can wrap the filling inside.
Step 4
Marinate the meat for thirty minutes. Season with salt, pepper, seasonings to taste. If you are in doubt about your choice, you can put a special seasoning for meat.
Step 5
Chop one onion thinly and fry in vegetable oil. The onion should be transparent, not golden brown and crispy.
Step 6
Prepare the filling. Take chicken fillet rolled through a meat grinder, an egg - salt, pepper, add fried onions. Toss everything in a separate bowl.
Step 7
Spread the filling over the edge of the chop. Roll so that the minced meat is inside. Tie the roll up with white thread or pin off the edges with a toothpick so they won't come apart during frying.
Step 8
Preheat a skillet with vegetable oil. Lay out the "fingers". Fry until golden brown, then turn over to the other side and fry in the same way. Remove the threads.
Step 9
Put the "fingers" in a saucepan, fill with water 1.5 cm higher. Fry the remaining onion cut into rings, diced carrots and bell peppers in butter. Place in a saucepan and add sour cream.
Step 10
Simmer until tender in the oven or on the stove over low heat. This will take about 30 minutes.
