Flan is the Spanish favorite dessert. Almost any meal ends with it. You don't have to go to Spain to try flan, you can use the classic recipe for this Spanish delicacy.

- Caramel:
- - sugar - 200 grams;
- - water - 200 ml.
- Flan:
- - 5 eggs;
- - 500 ml of milk;
- - lemon zest;
- - 150 grams of sugar;
- - a sprig of cinnamon.
Instructions
Step 1
First of all, you need to make caramel: mix sugar with water in a saucepan, bring to a golden color over the fire, without stopping stirring.
Step 2
Pour the finished caramel onto the bottom of each mold.
Step 3
Put milk on low heat with sugar, zest and cinnamon.
Step 4
At this time, beat the eggs. As soon as the milk begins to boil, it must be removed from the heat and poured through a sieve very slowly into the beaten eggs, not forgetting to constantly stir everything. You cannot pour eggs into milk - the mass will turn out to be heterogeneous, some of the eggs will curl.
Step 5
After the mixture is thoroughly mixed, it can be poured into molds over the caramel.
Step 6
The molds must be placed in a baking sheet in advance and pour water into it (about half of the molds).
Step 7
The flan will cook in a water bath at 180C for about an hour. Then you need to let it cool to room temperature.
Step 8
The finished flan must be put into the refrigerator. Dessert is served only cold.
