The pie can be made from ready-made filo dough or even thin pita bread. Or you can make your own dough and feed your family with delicious and simple homemade cakes.

Step 1
Prepare the dough first. To do this, take premium wheat flour, mix it with salt, pour in a mixture of water and vegetable oil. Knead the dough and leave it covered on the table with a bowl or bowl with a lid or plastic wrap or a damp cloth towel for at least 30 minutes. The longer the dough lies down, the more elastic and easier it will be to stretch.
Step 2
While the dough is preparing, make the filling. To do this, chop spinach at random and place in a saucepan or skillet with high sides, splash in some water and simmer over medium and then low heat until soft. Now rub the spinach with the curd cheese until smooth, and season with salt to taste.
Step 3
Divide the dough into 4 parts to make it easier to roll out. Sprinkle the table with starch. Take any starch: wheat, corn, potato or tapioca - it doesn't matter. Starch is needed in order to roll out the dough easier. Since this product does not contain gluten, the dough will not stick to the table and can be rolled very thinly and then stretched.
Take a piece of dough, roll it out with a rolling pin to a thickness of 2 - 3 mm. Now remove the rolling pin and place your hands under the dough, palms up. Slowly and carefully, begin stretching the dough from the middle to the edges, until the dough is paper-thin.
Step 4
Roll out all the pieces of dough in this way. Leave them to dry out a little. In the meantime, melt the butter.
Take a pastry brush and gently brush the surface of the rolled dough with oil. Brush about 2/3 of the surface with a thin layer of filling, leaving a distance of 2 cm. From this side, start rolling the dough into a roll.
Step 5
Take a round heat-resistant mold, grease with oil. Starting from the center of the form, start rolling the resulting roll up with a snail.
When one roll ends, continue the snail with the next.
Mix kefir with starch and spices, salt can be omitted. Pour this mixture over the stuffed dough snail.
Bake the pie at 200-220 degrees for 30-40 minutes.
Cool the finished pie in the form. Too hot a cake can fall apart, you need to keep it warm. The warm cake can be removed from the mold and cut into portions.
Serve the cheese and spinach pie warm or cold.
