The first who decided to diversify the classic recipe for Caesar salad was the famous Italian businessman and restaurateur Alex Cardini, brother of Caesar Cardini, the author of the famous dish. Alex decided to go a little further than his cousin and add other gourmet foods to the salad leaves with a gourmet dressing. Thus, a salad with red fish appeared, which is very popular nowadays.
It is necessary
- - 400 g of red fish;
- - 100 g of lettuce leaves;
- - wheat loaf;
- - 50 g of Parmesan cheese;
- - 2 eggs;
- - 1 tsp dijon mustard;
- - 1/2 lemon;
- - 2/3 st. olive oil;
- - salt to taste;
- - pepper to taste;
- - 1 clove of garlic;
- - 1 tsp Worcester sauce;
- - 10 cherry tomatoes.
Instructions
Step 1
First of all, you need to prepare the fish - separate the fillet from the skin, sprinkle with lemon juice, salt and pepper to taste.
Step 2
While the fish is marinating in the refrigerator, you need to cook the croutons. To do this, carefully cut off the crust from the loaf, and cut the pulp into equal cubes. Put the cubes on a baking sheet, season with salt, sprinkle with oil and bake in the oven until golden brown.
Step 3
Remove the fish from the refrigerator, oil the slices and bake in the oven or grill until cooked.
Step 4
Wash lettuce leaves, dry and cut into pieces with your hands.
Step 5
Grate the cheese on a coarse grater.
Step 6
Separate the whites from the yolks. However, you do not need to separate and prepare the sauce with proteins.
Step 7
Squeeze the juice out of the lemon.
Step 8
Peel and grind the garlic with salt and pepper. Add lemon juice, mustard, Worcester sauce and yolks to the resulting mass. Mix everything thoroughly. Add olive oil gradually while stirring.
Step 9
Season the lettuce with some of the sauce and half of the Parmesan. Mix everything. Arrange the fish, croutons and season with the remaining sauce. Sprinkle with cheese and garnish with cherry tomatoes. Bon Appetit.
